There's not much to justify this post other than my favorite treat as a kid (and probably still today) were the chocolate chip cookies my mom made. I love a good chocolate chip cookie and I want to be able to make them quickly and easily when I'm craving them. It has to be a one bowl wonder and not leave me in agony as I wait for them to bake for 20 minutes.
My adoration for tahini started fairly recently, probably in the last year or so. I love to toss it in salad dressings, pad thai sauce, on an egg sandwich... so why not add it to cookie dough? This is a great recipe to try if you've never had tahini before and want to get your feet wet. In these cookies it adds a fullness to the flavor and leaves you with a soft, pillowy texture. If you're a soft-baked cookie kind of person then these are for you. And if you're not... well these are also for you, maybe just bake them a bit longer!

Tahini Chocolate Chip Cookies

Ingredients
1 1/4 cup + 2 tbsp almond flour
2 tbsp coconut flour
1/4 cup tahini
1/4 cup maple syrup
2 tsp coconut sugar (optional)
1 egg
2 tbsp oil
1/4 tsp baking soda
1/2 tsp baking powder
1 tsp vanilla
1/2 tsp salt
1/3 cup chocolate chips
Instructions
Preheat oven to 375F.
Combine all of the ingredients into a bowl and mix well.
Form cookie dough balls using a 1-inch cookie scoop and place 3 inches apart on a greased baking sheet.
Bake for 8-12 minutes until edges are golden brown.
