If you live in Minnesota, chances are you know how to appreciate the fall weather. Our summer’s aren’t long, but they’re hot and humid, so fall is a nice change of pace. The humidity dies down, mornings are in the 50s or low 60s, and you start seeing leaves change. But my favorite part about fall—and I’m not ashamed to say it—fall flavors. Pumpkin spice, apple, cinnamon everything… I can’t get enough!
My personal favorite is pumpkin. Pumpkin lattes, pumpkin bread, pumpkin cereals, pumpkin ravioli—all of it. Apple is pretty solid too, and I’ll definitely be using plenty of them in the next few months, but pumpkin is my true fall favorite.
If you’ve been around for a bit, you know that I also LOVE Kodiak Cakes. Did you know they make more than just waffle mix? They’ve also got all-purpose baking mix, blondie mix, cornbread mix, gluten-free pancake cups, oatmeal, pancake cups—and that’s not even all of it! Since I’ve been at a grocery store for my internship for the last 5 weeks, I was able to snag some of the newer mixes while I saw they were on sale last week. I thought I would give the baking mix a try, and this is what I started with because, well, why the heck not.
I present to you Pumpkin Donuts with Maple Cream Cheese Frosting. These are moist, fluffy and most of all delicious. Since they’re made with Kodiak Cakes, you get an extra boost of whole grains, fiber and protein. The consistency is a bit more muffin like, and you could easily use a muffin tin too, but they’re SO yummy. I kept the donuts on the less sweet side since I really wanted the pumpkin to shine, and you can make the frosting to taste in order to round out the flavor you’re looking for. These are healthy enough that you can snag one for a weekday breakfast or toss one in your kid’s lunchbox, but tasty enough you can enjoy one for an after dinner treat too!

Pumpkin Donuts with Maple Cream Cheese Frosting
Makes: 6 donuts
Time: 25 minutes
Ingredients
Donuts
1 ½ cup Kodiak cakes all-purpose baking mix
1 cup canned pumpkin
¼ cup oil
¼ cup maple syrup
1 egg
2 tsp cinnamon
½ tsp nutmeg
1 tsp baking powder
1 tsp vanilla
2 tbsp milk
Frosting
4 oz cream cheese, softened
3 tbsp maple syrup
Milk, as needed, to thin out to desired consistency
Instructions
I. Combine all ingredients in a bowl and mix just until combined.
II. Place batter in a gallon bag (or piping bag) and pipe into greased donut pan.
III. Bake at 350F for 16-18 minutes or until knife comes out clean.
IV: While donuts are baking, whip the cream cheese and maple syrup together. Add milk to thin frosting out to desired consistency.
V. Let donuts cool, and then dip into the frosting. Sprinkle with cinnamon and enjoy!
