I remember growing up my mom used to make me fried egg sandwiches. Like literally a fried egg on bread, and I would dip it in ketchup. Not too classy. However, I was recently at a wine bar in Wichita (I've really come full circle), and they had a fried egg sandwich on the menu. To me that was a sign for me to start eating them again.
This sandwich is a re-creation of the one on The Wine Dive's menu, with a few tweaks. I'm not the biggest bacon-on-a-sandwich fan, so I went for prosciutto for a lighter layer. The other star component here is the truffle mayo. I was lucky enough to get my hands on the truffle sauce from Trader Joes and added it to my regular mayo, but you can find truffle mayo with a quick Google search. It really matures this sandwich, and in combination with the gruyere packs a good punch. You'll definitely feel classy while eating this sammy, even if it's just you in the comfort of your own home in your pajamas.

Prosciutto, Gruyere and Fried Egg Sandwich with Truffle Mayo

Cook Time: 10 minutes

Ingredients
4 slices sourdough
4 slices prosciutto
2 oz gruyere, shredded
2 eggs, fried
1 roma tomato, sliced
2 pieces leaf lettuce
2-4 tbsp truffle mayonnaise
Instructions
Heat a pan over medium heat.
Toast one side of each slice of bread in the pan, about 2-3 minutes until golden brown.
Next, fry your eggs to your liking and crisp up the prosciutto.
Once your eggs are fried, layer up the rest of the ingredients. Spread 1-2 tbsp of the truffle mayo on 2 slices of bread, top each with the shredded cheese, egg, prosciutto, tomato, lettuce and the remaining bread.
