Elote Inspired Chickpea Salad


I don't really have much to say about this recipe. I went to a BBQ fest and tried Elote for the first time and it was exceptionally better than I thought it would be. Something about the acid and spice and salt combination just works so well.


As I've been eating more plant-based lunches, simply because they're delicious, nutritious and easy to meal prep and pack ahead, I ended up with a chickpea salad. We've also had at least 4 cans of chickpeas on hand at all times because we always assume we're out at home when we're shopping (plot twist, we never are) so I've been wanting to be more creative with them. You really can do so much with them that it's worth having a can or two in your house for those times you just don't want to cook.


If you don't have the time or desire to roast your own corn, frozen works just as well (Trader Joe's has a great option). Additionally, if you're not vegan or dairy-free, go ahead and use parmesan in this recipe! You also can use plain nutritional yeast, but I highly recommend making this vegan parm.

Elote Inspired Chickpea Salad



Ingredients

  • 1, 15-oz can of chickpeas, drained

  • 3/4 C roasted corn

  • 2 tbsp vegan mayo

  • 1 tsp chili powder

  • 2 tbsp vegan parmesan

  • 1/2 tsp salt

  • Juice of 1 lime

Instructions

  1. In a medium bowl, smash the chickpeas with the back of a fork

  2. Mix in the remaining ingredients

  3. Serve on your favorite bread, a bed of greens or with a side of crackers

  4. Enjoy!
